Watermelon & Tomato Salad


Ingredients

  • lemon
  • 1/4 cup extra-virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon cracked black pepper
  • 12 wedges yellow or red watermelon, rind removed
  • 1 pint of cherry and/or grape tomatoes
  • small red onion, thinly sliced
  • 12 ounces fresh mozzarella, thinly sliced (12 slices)
  • 1/4 cup mixed olives, pitted, sliced
  • Fresh basil leaves, to garnish

Make It

1.Zest and juice the lemon. In a medium bowl, combine the lemon zest, lemon juice, olive oil, salt, and pepper.

2.Mix watermelon, red onion, tomato and mozzarella. Drizzle lemon vinaigrette over salad. Top with sliced olives and garnish with basil.
