Superfood Salad


INGREDIENTS

  • 1cup balsamic vinegar
  • 1teaspoon salt
  • 1teaspoon ground black pepper
  • 1cup extra-virgin olive oil
  • bunch kale, stems removed and leaves chopped
  • 1cup red onion, diced
  • cup shredded carrot
  • 2cup fresh blueberries or strawberries
  • 1cup raw almonds 
  • 1cup raw pepitas
  • 23 cup of grape or cherry tomatoes
Instructions
  1. Place olive oil, vinegar, salt, and pepper in a small bowl. Whisk together.
  2. Place kale in large bowl. Pour dressing over it. Using your clean hands, massage the dressing into the leaves for 5 minutes.
  3. Place red onion, carrot, blueberries, almonds, pepitas, and tomatoes in with massaged kale.
  4. Using your hands or with a spoon, gently mix.
  5. Place in refrigerator to “marinate” for 10-15 minutes or longer for maximum flavor.
