Hot Peppers


IN SEASON: July, August, September
STORAGE: Store unwashed peppers in a plastic bag in the front or center of the refrigerator where is it the warmest.  Freeze or dehydrate for long-term preservation.
COOKING TIPS: Most of the heat is contained within the seeds and veins of hot peppers.  However, the oils in the pepper can cause skin and eye irritation, so you may want wear rubber/vinyl gloves when handling.  I definitely do!  And even when wearing gloves, be sure to wash hands with soap and water after handling.  Nobody wants to experience pepper oil in their eye(s).  Hot peppers are a great way to add a little zing to a dish or enjoy a couple jalapeno poppers as an appetizer.  Click on the following link to see how hot different varieties are:  Heat Index Chart
