Fennel


IN SEASON: June
STORAGE: Store unwashed in a plastic bag in refrigerator. In these conditions, fennel should last 5 days.  The bulb may last longer, but the stalks and fronds (feathery leaves) will begin to go limp after 5 days.
COOKING TIPS: All three parts of the fennel are edible- bulb, stalks, and fronds.  The bulb does contain a core which needs to be removed by cutting in half vertically.  The bulb is great for braising, in salads, and pairs wonderfully with salmon.  The stalks are perfect for stocks, soups, and stews.  And the fronds are a great herb or seasoning.
