Carrots


IN SEASON: May, June, October
STORAGE: Remove green tops from carrots before storing.  Both are edible, but need to be stored separately to prevent nutrient depletion.  Carrots should be stored either loose or in a plastic bag in the refrigerator (in crisper drawer, if available).  In these conditions they will keep for several weeks.  Green tops should be stored in a plastic bag in the refrigerator, but unlike carrots, they will only last 2-3 days.
COOKING TIPS: Carrots do not require peeling.  Carrots are sweet raw, but even sweeter when cooked.  Unlike most vegetables, carrots do not loose many nutrients when cooked even making some of the nutrients more absorbable by the body.
