Beets


IN SEASON: June, July, August, September, October
STORAGE: Beet green should be eaten as soon as possible as they wither quickly.  Remove leaves 1-2 inches from the beet root to maintain firmness of beet.  Store beet roots in a plastic bag in refrigerator.  If humidity controls are present store in the most humid area of refrigerator.  In these conditions, beet roots should last 3-5 months.  Can be canned or frozen for long-term preservation.
COOKING TIPS: Wash beets carefully to try to prevent breaks or tears in the skin.  Breaks and tears in the skin allow color and nutrient loss during cooking.  Stained hands can easily be cleaned with salt.  Beets have a high sugar content which is fully captured when grilled or roasted.  A perfect salad topping.
